Barista & Coffee 2: Advanced Coffee Science & Sensory Training

This seminar is designed to enhance baristas’ understanding of coffee as a raw material, refine their sensory skills through guided tastings and scientific tools, and provide specialized knowledge in coffee science and advanced brewing techniques.

The program includes an in-depth study of coffee beans, exploring varieties, processing methods, and their impact on flavor. Participants will also be introduced to advanced grinder calibration techniques, using a digital refractometer to analyze extraction, experiment with different coffee profiles, and create their own blends under the guidance of expert trainers from the Bar Academy.

A key focus of the course is on the scientific aspects of coffee and broadening sensory perception. One day is dedicated entirely to espresso and its complex flavor components, while another focuses on advanced brewing techniques, covering various methods and their applications. Participants will also engage in cupping sessions to deepen their understanding of the coffee flavor wheel, and an introduction to latte art will provide insights into milk texturing and presentation.

This seminar is ideal for baristas looking to expand their expertise, develop a scientific approach to coffee brewing, and refine their skills in tasting, extraction, and creative presentation.

Theory & Practical Training: Advanced Coffee Techniques

Participants will dive into the scientific and technical aspects of coffee, focusing on key areas such as:

  • Green Bean Evaluation – Understanding and assessing unroasted coffee beans.
  • Coffee Varieties – Exploring different species and their impact on flavor.
  • Espresso Extraction Analysis – Key variables affecting the perfect shot.
  • Brew Methods & Brew Charts – Mastering different brewing techniques.
  • Total Dissolved Solids (T.D.S.) – Measuring and analyzing coffee strength.
  • Cupping Protocol – Standardized tasting methods for evaluating coffee.
  • Espresso Blend Cupping – Developing sensory skills for espresso blend creation.

Hands-on sessions will allow participants to apply their knowledge in:

  • T.D.S. Targeting – Achieving optimal extraction balance.
  • Immersion Brewing & Bypass Techniques – Refining alternative brewing methods.
  • Espresso Sensory Evaluation – Identifying flavor profiles in espresso.
  • Blending & Espresso Extraction – Crafting well-balanced espresso blends.
  • Introduction to Latte Art – Learning the foundations of milk texturing and design.

This intensive training equips baristas with theoretical depth and practical expertise, preparing them to master extraction, brewing, and sensory evaluation at a professional level.

Seminar Materials, Certification & Attendance Policy

  1. Participants who successfully complete the full training program and pass both theoretical and practical assessments will be awarded a Certificate of Completion.
