This seminar provides comprehensive training on how to create homemade ingredients, infusions, and garnishes, maximizing the potential of every product used behind the bar—ensuring that nothing goes to waste.

What You Will Learn

Participants will gain hands-on experience in:

  • Homemade ingredient production, including syrups, liqueurs, and infusions.
  • Modern bartending techniques such as sous vide, liquid nitrogen, and dry ice applications.
  • Alcoholic fermentation methods, including yeast-based fermentation for Kombucha and best practices for food safety and hygiene in fermentation processes.
  • Zero Waste Management, a unique initiative in Greece, aimed at minimizing organic waste, reducing costs, and transforming by-products into valuable cocktail ingredients.
  • Creative cocktail development, enabling participants to design their own homemade products and signature drinks.

This five-day program combines theory and practical application, ensuring that participants can immediately implement these techniques in their workplace. The seminar concludes with real-world applications, focusing on recipe creation, cocktail presentation, and professional execution.

Conservation & Preservation Techniques

This session focuses on preserving ingredients to enhance flavor and minimize waste behind the bar. Participants will learn techniques for creating and maintaining homemade ingredients, including orange marmalade, citrus cordial, citrus oleo-saccharum, fresh herb syrup, and fruit purée. These essential skills help bartenders elevate their cocktails while ensuring sustainability and efficiency in ingredient management.

Infusions & Aromatics

This session focuses on flavor extraction techniques to enhance cocktail ingredients. Participants will explore hot and cold infusions, blend infusions, and fat-washing methods, learning how to extract depth and complexity in spirits. Through hands-on practice, they will master both cold and hot fat-washing, creating unique textures and layered flavors in their cocktails.

Creative Techniques

This session delves into modern bartending methods that enhance texture, presentation, and flavor. Participants will explore techniques such as gel and veil creation, clarification, carbonation, mousse preparation, spherification, and the use of foams, airs, and espumas. Through hands-on training, they will learn how to incorporate these advanced methods into cocktails, adding innovation and sophistication to their craft.

Zero-Waste Management

This session focuses on sustainable bartending practices, maximizing ingredient use while minimizing waste. Participants will learn techniques such as chip preparation, powder extraction, caramelization, dehydration, and pulp utilization. By transforming by-products into valuable cocktail components, they will enhance both sustainability and creativity in their craft.

Seminar Materials, Certification & Attendance Policy

  1. Each participant enrolled in this seminar receives the training program notes, which include sample recipes to support their learning and practical application.
  2. Participants who successfully complete the full training program and pass both theoretical and practical assessments will be awarded a Certificate of Completion.
