George Spithakis

He began working with coffee in 2000, and by 2003 it had become his primary profession. Since 2006, he has been actively involved in training, consulting, and mentoring both individuals and businesses in the coffee and hospitality industry.

A member of the Specialty Coffee Association (SCA) since 2011, he is a certified sensory judge in SCA coffee competitions. From 2015 to 2018, he was a certified SCA trainer in the Barista and Brewing modules. In 2017, he achieved 3rd place in the Hellenic Coffee Roasting Championship.

He is currently the co-owner and head of the coffee department at Crop Roastery in Heraklion, Crete. His responsibilities include sourcing and selecting green coffee, overseeing the roasting process, and managing quality control at every stage of the production chain.

Driven by a passion for continuous learning, exploration, and sensory experience, he remains committed to deepening his understanding of coffee in all its dimensions.
